Templates set how the buttons are arranged on the keypad - not the colors. Pick a template and keep editing manually from there.
Tap one button, then tap a second one - even on a different screen below (Scientific / Advanced / Categories) - to swap them. Any button can move anywhere, including BACK and the digits. ✕ in a button's corner deletes it entirely, leaving an empty dashed slot; tap that empty slot to pick a button to put there.

Same idea exactly - including swapping a button with one on a completely different screen, and deleting with ✕.
Check which built-in formulas show right on the FORMULAS screen - anything left unchecked still exists, just one tap away behind its category's "MORE" button.
Add your own - a name and a formula, using a single letter per value to fill in (e.g. "R" for radius): π*R^2. These always show on the watch's FORMULAS screen, under "Custom". No on-device validation - a typo just shows as an error when used, it won't break anything else.
